Ajdova povitica

Testo:
500 g ajdove moke
7 dl vroče vode
1 žlica soli
1 žlica svinjske masti
2 jajci
2 žlici sladkorja
2 dl mleka
60 g kvasa
1 žlica sladkorja
750 g bele moke
Nadev:
600 g kravjega sira
3 dl kisle smetane
2–3 rumenjaki

Ajdovo moko poparimo z vročo vodo. Ohladimo, da je moka mlačna, dodamo sol, svinjsko mast, jajca in sladkor. V mlačno mleko damo kvas in žličko sladkorja in postavimo na toplo, da vzhaja. Vzhajan kvas prilijemo k ajdovi moki. V testo vmesimo še belo moko in pustimo, da vzhaja približno eno uro. Testo razvaljamo na poljubno debelino, namažemo z nadevom in zvijemo, položimo v namazan pekač in damo vzhajati. Povitico po vrhu namažemo z mastjo in pečemo 1 uro pri 200 stopinjah Celzija.

Kvasna ajdova s sirom se je pekla jeseni, ko so imele gospodinje svežo ajdovo moko. Najbolj tekne še topla.
